Homemade mini blueberry muffins

There’s nothing like fresh picked blueberries and a healthy snack to be made with them. Me and Barrett went to a wonderful blueberry farm called, Owen’s Blueberries. We went on memorial day as our little date. It was so much fun and such a great experience. There were twelve different kinds of blueberries. I was so fascinated by that due to the fact I never knew there were even two types of blueberries. While you go and pick the blueberries, you get to taste them to make sure that they are the ones that you want. We tasted some very sour ones and some very sweet ones. We stuck with the sweet ones and got about 3 or 4 different types. They were so yummy.


I got an itch to bake today and I decided to make homemade, from scratch, blubbery mini muffins made with our fresh picked blueberries.


First, I got all of my ingredients together. I do better when everything is sat out right in front of me nicely.


1 pinch of Salt

1 cup of blueberries

1/2 cup of butter

1 cup of white sugar

2 teaspoons of baking powder

2 1/2 cups all-purpose flower

2 eggs, beaten

1/2 teaspoon of vanilla extract

1/2 of cup of milk



Preheat oven to 375 degrees F (190 degrees C)

Sift together flour, baking powder and salt.
I personally do not have a sifter. I do however have a strainer which does the same thing. There are many ways to substitute a sifter. There is no need to buy one if you don’t use one often.


In a large bowl, cream butter or margarine with sugar.


Beat in eggs and vanilla flavoring.


Mix in milk and flour mixture alternately in three parts, starting with the milk.

Gently mix in blueberries.


Drop batter by tablespoons into muffin pan


Bake 15 to 18 minutes.

Check with toothpick. Make sure it comes out clean. Blueberries might come out on it but that’s okay. You just don’t want the batter coming out.

I finally did it! I love it! It’s so exhilarating and ridiculously liberating. I have been so bored of my blonde hair for so long. I am so happy with it. I am so thankful that my best friend helped me do it! Also I got this cute new top from Target for only $6! Such a good day! All I have to say is take chances because it’s worth it!

Spring Cleaning, well maybe Summer


CLEANING! It’s my therapy when I need to feel like I have some order in my life. I am an organizational freak and a perfectionist. I spent today doing laundry cleaning my bathroom, my room, and kitchen. I let things get out of control in my room sometimes and the clutter starts to build up. The anxiety kicks in and I can’t do anything! I cannot get school work done and I cannot relax! Silly, I know!

So, I ripped the sheets off my bed, the things off of my counters and began to scrub down. Now, I’ve had this awesome goal to organize everything in my room and completely go through it and throw anything out that I haven’t used in the past 6 months. Now of course goals are far from plans. You obviously need to set up a plan in order to meet your goal. I seem to have a problem in doing that…oops 🙂

Organization is something I feel we should all have in our lives but have a hard time finding the TIME to do it. Yes time is a funny, funny thing. It’s there but it literally flies by, therefore, I am going to set up one day a week that I commit entirely to cleaning and organizing. Just one day a week. Whether it be doing laundry and cleaning the bathroom or working in my garden. I might even begin to throw out some of my unneeded things. So I challenge you along with me to choose at least one day a week to commit entirely to organizing and cleaning and I guarantee you’ll find your life a lot simpler. You might even find more time to organize or time to do absolutely nothing. We spend so much time looking for everything in our clutter of a mess that we’re losing all of it. Time is a valuable thing and it should never be wasted.

Well, I have been inspired due to finding some great organizational blogs. I plan on sharing them with you because they are incredible. There is one in particular that I feel is very relatable to the common woman.I am setting my goals and making my plans. I plan on organizing a budget for myself since I am working extremely minimal hours due to school. I plan on reorganizing my whole room and throwing out anything unnecessary and along with that, my bathroom. Organization is key and I love it! I have a little bit of it, however, I tend to get off track quite often. So I am setting it up on here to hold me accountable! So here’s to hoping!

The day the Piano Man gave me faith


I felt the strain in my chest and the lump in my throat, because everything has been going incredibly unusual and incredibly wrong. I walked into the doctors office for my MRI and echo cardiograms this morning and I could smell that scent of a doctors office, the smell that makes reality dawn on you like a ton of bricks and causes the weight of the world to just sit on your shoulders. Today could change my life forever. I mean they say it’s just precautions and it probably is, but there’s still a possibility.

I encounter the young receptionist and tell her my name, she gives me the paper work to fill out and of course there are like 10 pages and its 9 in the morning. It’s necessary though, so I sit down and fill out my paper work watching the people who work there walk in and out of the white glass doors. I feel like I filled out the same question 5 times and I still have that lump in my throat because I just want all of this to be over.

I walk into the MRI room and make sure I have all the “metal” objects off such as bobby pins and earrings. I lay down where the technician shows me and put my head in the white mold to hold it still. The technician asks me if I want a blanket, and of course I do because I am always freezing. He puts the white mask like thing over my head and asks if I would like the music on, I say “yeah sure.” Some weird song is ending, but oh well it’s background noise.

All I can think about is how I wish Barrett was there to comfort me and hold my hand, and then the next words I hear out of those speakers are,

“Its nine oclock on a saturday
The regular crowd shuffles in
Theres an old man sitting next to me
Makin love to his tonic and gin….”

My heart sinks and I feel the smile spread across my face. One of Barrett’s favorite songs ever and suddenly I feel like he’s there, and in that moment I feel the weight of the world lift a little bit. I know it might sound weird but I have never felt so much comfort in a doctors office. Finally, I relax, because in that split second, it was like a reminder that everything was going to be okay…

It was a subtle reminder that I need to feel comfort within my own heart and in the little things that are around me. I know that God is with me, and my family and Barrett are with me.

College Stress? Make it a little less.

Stress is one of the major things in college that makes me “ahhh!!” I quit multiple times a week and my boyfriend says “oh yeah?, okay” (knowing I never mean it) and then five minutes later I finish whatever is stressing me and mostly move on.

I have found some things that help me to feel a little less stressed in the daily life of a college student. I want to share them with you because I feel if it helps me, it could possibly help you and that is what I am here for! I like to share my ideas and what I feel could possibly make lives a little easier.

Now these tips might take you a little time to get used to, but if you  make a routine out of them, they could make the next days, months, and years of your life much simpler!

Here are five tips to help you become a little less stressed!


1. Don’t work too much!

I understand that not everyone can go through college without working. I’m saying work as little as you can. Personally, I worked and worked and worked till I could barely breathe I was so stressed. Finally, I realized the amount that I was working was nothing but unnecessary. I was buying things with my money that I did not need, but wanted. Therefore, work as little as possible to keep the stress down, or take less classes, but either way it’s not worth the anxiety to over work yourself.

2. Don’t procrastinate!

I am guilty of this as a student myself, however, I’ve noticed that by taking a little extra time each day to get work done that’s not due that day or the next, really alleviates a lot of stress. Plus the quality of your work will increase dramatically due to the fact that you don’t have to cut corners. You will feel a great amount of relief and accomplishment! There’s nothing better than crossing something off your list for good! Which leads me to my next point.

3. Make lists!

I cannot stress this to you enough. Lists are lifesavers. When you’re a college student, among other things, whether it be a wife, a mother, a sister, a brother, husband, father, etc., life gets a bit hectic. Lists help you to remember everything you need to do. What I do is a monthly and a weekly list. My monthly list is based on a dry erase monthly calender that I got from Target. At the end of every month I erase the past month and create my new month and put everything I have to do on the date it needs to be done. It’s so nice to walk into my room and just have to glance to see what I need to do. From this, I make my weekly lists, my weekly lists not only include my homework, but my appointments, miscellaneous chores and errands I would like to complete, and any other little things I might think of. Lists help you remember and they help you feel accomplished once you are able to cross off once your tasks are completed.

4. Eat Healthy!

It’s okay to binge here and there and give into your cravings! However, overall eat healthy! You’ll than yourself for not getting the freshman 15. I myself, got the freshman 15 and am proceeding to work it off and eat healthy. Also, you might think unhealthy foods are what will make you feel better, but healthy foods will give you long lasting energy rather than a burst and then a crash. Drink more water than coffee and pick veggies or fries. It will fill your tummy just the same, but it will make your energy level sky rocket. This will keep you going longer and allow you to get stuff done.

5. Exercise!

Make sure to exercise for at least 30 minutes a day. Doing this will help to relieve stress and give you a lot more energy! Exercise is a good part of your routine to have. Even if it’s just a walk or run around the block, a few sit-ups a day, etc. These things will increase your energy and allow your anxiety to go down.
